2c sifted flour
1tbs Baking Powder
1/2tsp salt
4tbs sugar (more or less if you like)
8tbs (1 stick) of cold butter
3/4c of buttermilk (you can sub cream or half and half)
Instructions:
1) Preheat oven to 400 degrees.
2) Mix all dry ingredients together.
3) Cut the stick of butter into pieces and work into the flour mixture with your hands until you have little pea sized lumps in the flour.
4) Add the liquid, mixing until slightly loose and sticky. (you can add a tiny bit more liquid if need-be).
5) Put your dough onto a floured surface and knead for a minute. The dough should be smooth and no longer sticky. You can sprinkle more flour if you find it still sticking but be careful not to add too much flour because it will make your biscuits "heavy".
6) Form the dough into a ball and hit it a couple times with your hands or rolling pin. Turn it and fold it a few times between whacks. (i'm sorry, i have no better way of saying this ... *giggles*) You can skip tgis step if you want vut tou do need to work tge dough a bit.
7) Roll dough out until it is about 1/3rd of an inch thick
8) Cut your dough using a round biscuit cutter (glass or a cup will do if you don't have one)
9) Place your biscuits on a greased baking sheet close together so they'll rise nicely.
10) Bake for 15-20 minutes or until they are golden brown. This may vary depending on the tthickness of the dough and how evenly your oven cooks. I suggest using a glass, round pyrex dish.
This recipe makes about 10 to 13 biscuits for me.
